Chop the broccoli and cauliflower
In a bowl, combine the sweet corn, broccoli, and cauliflower mix until well combined.
Sieve the flour in a large bowl. Add the egg and mix well.
Combine all ingredients and add a pinch of salt.
Heat a little olive oil in a frying pan and add in a heaped tablespoon of the fritter batter.
Press down gently with a spatula and repeat until the frying pan is full.
Fry the pancakes on medium heat for approximately 4 – 5 minutes on either side or until they are golden brown and cooked through
