Broccoli Corn Filters

Ingredients
  

  • Sweet corn
  • Broccoli
  • Cauliflower
  • Olive oil (for frying)
  • Egg
  • Salt

Instructions
 

  • Chop the broccoli and cauliflower
  • In a bowl, combine the sweet corn, broccoli, and cauliflower mix until well combined.
  • Sieve the flour in a large bowl. Add the egg and mix well.
  • Combine all ingredients and add a pinch of salt.
  • Heat a little olive oil in a frying pan and add in a heaped tablespoon of the fritter batter.
  • Press down gently with a spatula and repeat until the frying pan is full.
  • Fry the pancakes on medium heat for approximately 4 – 5 minutes on either side or until they are golden brown and cooked through
  • Serve with love.
